Bacon, sweet potato and zucchini slice

  • 200 grams of sweet potato, peeled and cut into pieces
  • 200 grams of zucchini, roughly chopped
  • 220 grams of tasty cheese, roughly chopped
  • 3 rashers of smokey bacon, fat removed and roughly sliced
  • 1 brown onion, peeled and quartered
  • 4 eggs
  • 150 grams of self raising flour
  • 1 level tsp of dried thyme leaves
  • salt and pepper to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180deg fan forced, greese a slice tin, pyrex container of your choice
    Add cheese to bowl and grate 5 seconds, speed 6 then set aside
    Add sweet potato, onion, zuchinni, bacon the the bowl and chop 6 seconds speed 6
    Add cheese, eggs, thyme and mix 5 seconds speed 4
    Add the flour and mix 6 seconds, speed 4 - bring the bottom of the bowl up with your spatlual and blend again 4 seconds speed 4
    Spread into your pepared container and bake 180deg 35-40 minutes
    Serve as a snack or with a crisp salad or steamed greens for luncheon or dinner

    I had this hot out of the oven; delicious. I had it cold later on and for lunches at work, the next two days. Same result, delicious.
