  • 800 g Dark fruit cake
  • 120 g dark rum
  • 250 g dark chocolate
  • 3/4 cup dessicated coconut

Recipe's preparation

  1. 1. Break up 800g cake and pop into mixing bowl. Blitz on speed 6 for 2 seconds.

    2. Add 150g of rum to the bowl. Mix on Counter-clockwise operation"Counter-clockwise operation" speed 2, for 5 seconds.

    3. Empty cake into a seperate bowl.

    4. Break room temp chocolate into 1-2cm pieces. Place into the bowl & blitz for 5 seconds on speed 7. Chocolate should resemble bread crumbs texture. Mixing it for too long will cause it to seize.

    5. Melt chocolate on speed 1, 45 degrees for 8 minutes.

    6. Once melted, add chocolate to the bowl with the cake & then add 3/4 cup of coconut (or measure with your heart!) to the bowl.

    7. Mix altogether by hand

    8. Refrigerate until set - they are best kept cool

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
