Ingredients

Sauce

  • 1 small onion
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp oregano
  • 1/2 tsp chilli powder (optional)
  • 1 tbsp tomato paste
  • 400g crushed tomatoes
  • 1 cup corn (frozen or tinned)
  • 1 can black beans (frained)
  • Salt & pepper to taste
  • 1 cup TVP granules
  • 1 cup boiling vegetable stock

For layering

  • 6 to 8 large round tortillas
  • 1 to 1.5 cups of grated cheese (or vegan cheese)

Optional toppings

  • Coconut yoghurt
  • Sour cream
  • Guacamole

Recipe's preparation

    Rehydrate TVP
  1. In a bowl, combine TVP and boiling vegetable stock.

    Stir and set aside for 10 minutes to absorb.
  2. To make the sauce
  3. Add onion and garlic to Thermomix bowl → 5 sec / speed 5. Scrape down sides.

    Add olive oil → 3 min / 100°C / speed 1

    Add cumin, paprika, oregano, chili powder, and tomato paste → 1 min / 100°C / speed 1.

    Add crushed tomatoes, black beans, and corn → 10 sec / speed 6, or longer if you want it completely smooth.

    Add rehydrated TVP and a good pinch of salt and pepper.

    Mix with spatula, then cook: 10 min / 100°C / reverse / speed soft, MC off with simmering basket on lid to avoid splatter.
  4. Assemble the lasagna
  5. Preheat oven to 180°C (350°F).

    In a baking dish, start with a spoon of filling to coat the base.

    Layer as follows:

    Tortilla

    TVP filling

    Grated cheese

    Repeat until all used up, finishing with a tortilla and a layer of cheese on top.
  6. Bake
  7. Cover with foil and bake for 20 minutes.

    Uncover and bake another 10 minutes until cheese is golden and bubbly.

    Let rest 10 minutes before slicing.

    Top with optional sour cream, avocado, coriander, or lime wedges.

Tip

TVP or textured vegetable protein is found in Coles and Woolies in the healthfood aisle. It's a cheap substitute for mince meat and works well in lots of vegetarian meals.

You can add chopped veggies like mushroom, zucchini and capsicum to the filling for extra veg. Blend with the beans if you need to hide them.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
