Ingredients

GF amazing Quinoa choc cake

  • 170 g Butter, Cubed or 1/4 cup melted
  • 80 g Milk
  • 4 eggs
  • 1 level teaspoons vanilla extract
  • 350 g Cooked Quinoa, Approx 2 cups cooked
  • 300 g white sugar
  • 90 g unsweetened cocoa powder
  • 1.5 level tsp baking powder
  • 0.5 level tsp bicarbonate of soda
  • 0.5 level tsp fine sea salt

Whipped Chocolate frosting

  • 240 g Semi sweet or dark choc chips
  • 480 g Heavy cream/ whipping cream

Recipe's preparation

    Cake
  1. 1. Prep: preheat oven to 175°c

    Grease two 8inch cake pans and line bottom with

    2. Melt butter (if starting from solid butter) place 170g cubed butter into mixing bowl and melt for 3mins 60°c speed 2

    Allow to cool slightly 2-3mins

    3.combine liquids and quinoa:

    Add milk 80g, vanilla extract 1tsp, cooked quinoa 350g to mixing bowl. Puree 1 minutes speed .

    4. Scrape down the sides with spatula. Blend again 30secs speed 9 until completely smooth and creamy

    (Check to make sure no whole quinoa beads remain)

    5. Add dry ingredients

    Add sugar 300g, cocoa powder 90g, baking powder 1.5tsp, bi carb 1/2 tsp, salt 1/2 tsp. Mix for 20 secs speed 4. Scrape down sides and mix again for 10 seconds speed 4 until combined.

    6. Bake

    Divide butter evenly between the prepared cake pans bake for 28-30 mins (or until a toothpick is inserted into centre and comes out clean)

    7. Cool

    Cool in pans for 10mins then invert onto wire rac. Peel off parchment paper and allow to cool completely before frosting.
  2. Whipped Chocolate frosting

    1. Heat cream

    Place cream 480g into mixing bowl and heat for 4min 80°c speed 1

    2. Melt chocolate

    Add choc chips 240g stir for 10secs speed 3 then let stand in the mixing bowl for 5 mins

    3. Emulsify: mix for 30secs speed 3until smooth and glossy

    4. Chill: transfer choc mix to sealed container and refrigerate for at least 2-3hrs or 1hr in freezer. Until completely cold.

    Clean and dry bowl thoroughly.

    5. Whip: place butterfly whisk onto blades, pour chilled choc mix into bowl. Whip speed 3.4 (no set time)

    Approx 1-2 mins until soft peaks form (careful not to overweight into butter).
  3. Assembly

    1. Place the first cooled cake layer onto serving plate.

    2. Spread about 1/2 of whipped frosting over the top layer.

    3. Place second cake layer on tol and spread the remaining frosting over the top and sides

    4. Chill in refrigerator for 2hrs before serving to allow frosting to set.
