- Prep & Wash: Separate red calyxes from the green seed pods. Discard pods. Soak and wash calyxes
thoroughly to remove garden bugs. Shake completely dry or spin in a salad spinner before weighing. - Chop the Fruit: Place your weighed calyxes into the Thermomix bowl. Chop for 3 seconds on Speed 5. Scrape
down the sides of the bowl with your spatula.

"Blend" 3 Seconds on Speed 5 - Soften the Fruit: Add the water. Secure the lid

"Warm Up" , leave the measuring cup off, and place
the simmering basket on top to prevent splatters. Cook for 8 minutes at 100°C on Reverse / Speed 1.5 until soft
and collapsed. - Dissolve Sugar: Add the jam sugar. Put the measuring cup back on. Mix for 15 seconds
on Reverse / Speed 2 to fully incorporate.

"Counter-clockwise operation" - The Final Boil (Setting Stage): Take the measuring cup off again and replace it with the simmering basket.
Cook for 9 minutes at Varoma temperature on Reverse / Speed 1.5.

"Sous-vide" - Cold Plate Test: Drop a tiny spoonful of hot jam onto an ice-cold plate (pre-chilled in the freezer). Let it sit for 30 seconds, then push it with your finger. If it wrinkles beautifully, it is ready! If too liquid, cook for an extra 1 to 2 minutes at Varoma temperature.
- Bottle & Seal: Pour the hot jam immediately into hot, sterilised glass jars (boiled on the stove to accommodate metal clasps).

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
