Baby coconut chicken meal

Ingredients

20 portion(s)

  • 120 g chicken breast, roughly chopped
  • 220 g vegetables/fruits, eg. pumpkin, sweet potato, carrot, broccoli, or other age-appropriate veges
  • 85 g coconut milk/cream

Recipe's preparation

  1. 1. Place chicken, vegetables and coconut milk into TM bowl. 

    2. Cook for 10MIN - 100DEG - Counter-clockwise operationGentle stir setting

    3. Pulverise for about 10SECS - SP7, checking there are no lumps. (or try for just 5SECS for a chunkier meal). 

    The fats in coconut milk have been found to be close those in breast milk and thus is an ideal way to keep meat moist for your baby as well as being nutritious.  

    This meal can be frozen (after using fresh chicken) and made thinner by adding more coconut milk, milk, breast milk if required.

    Quadrupled, added 1tsp of turmeric, 1tsp cinnamon and cooked for 20mins.
    Both my 7 month old and 2.5 year old love it.😊

    Very easy to make using whatever veges you have available. My 8 month old took a few tries, but now seems to really enjoy it. I've made it with both chicken breast and thigh and they both work well. Freezes really well too.

    After reading other reviews I used chicken thigh for its higher iron content and "roughly" quadrupled the recipe so I used 500g chicken and a whole 400g can of coconut cream. I used up whatever veggies I had (broccoli, carrot, pumpkin, zucchini) and increased cooking time to 20 minutes. I also added a pinch of cinnamon and turmeric for their anti-bacterial powers now that winters coming. My super-picky toddler gobbled it up, which is great as I have heaps in the freezer! Thanks so much for such an easy, nutritious and delicious recipe!!

    From what I've read, coconut milk is very good for babies and I haven't known it to be a common allergen so just test with caution as soon as you want to give them meat (another hot topic of when to introduce!)..
