Strawberry Yoghurt Muffins

  • 230 grams self raising wholemeal flour
  • 120 grams Coconut Oil, solid
  • 2 EGGS (50G)
  • 120 grams Fresh strawberries
  • 60-80 grams plain yoghurt, Made from Basic Cook Book

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Steps
  1. Preheat oven to 180 degrees.

  2. Add flour, coconut oil, and eggs to bowlClosed lid, mix 20 seconds on speed 4. 

  3. Add yoghurt, mix 10 seconds speed 5. Add more yoghurt for desired consistency. 

  4. Add strawberries, for a smooth mixture 10 seconds on speed 5, for a chunky mixture 8 seconds on speed 3

  5. Spoon into oiled mini muffin pans and bake for approximately 15 minutes.

    I didn't have strawberries - put some chopped raw apple in at step 3 and 1/4 tspn cinnamon, and processed 20 seconds speed 5. Worked great thanks.
