Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- As per the Basic Cook book: Place flour, butter, salt and water into "Closed lid" and mix 20sec / speed 4.
- Transfer pastry onto a Thermomat or floured surface and work into a flattened bowl. Wrap dough in Thermomat or plastic wrap and refrigerate until needed
- Roll pastry onto baking baker and transfer to tart tin. Place another piece of baking paper on the top with baking beans, and pre-cook pastry for 8min.
- During that time, pour eggs, creme fraiche and blue cheese into "Closed lid" and mix 10sec / speed 3.
- Remove pastry from oven and sprinkle walnuts over it. Place pears all over the pastry (see picture), and pour mixture onto it.
- Cook for 40minutes or until gold.

I've made this twice and loved both times. I have used half the blue cheese (because that's what I've had to hand), and it's been enough flavour. Delicious with apple and ginger paste https://www.recipecommunity.com.au/sauces-dips-spreads-recipes/apple-and-ginger-paste/7jv1n0bq-9d870-253940-cfcd2-8p0eypxz
