  • 60 g Tasty cheese
  • 25 g Parmesan cheese
  • 4 slices shortcut bacon
  • 1 small onion, peeled and quartered
  • 20 g light olive oil
  • 100 g frozen corn kernels
  • 150 g plain flour
  • 3 teaspoons baking powder
  • 80 g melted butter
  • 2 eggs
  • 100 g Milk
  • to taste ground black pepper
  • Dried parsley, optional
  • sesame seeds, to decorate

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 200ºC. Grease muffin tins with a little butter or line with patty pans.

    Place 60g cubed tasty cheese and 25g cubed parmesan cheese into bowl and grate 8 sec/sp 7.

    Set aside. Don't wash bowl.

    Add 1 small brown onion, quartered and 4 slices shortcut bacon and 3 sec/sp 5. Scrape down and chop for a second or two more if necessary.

    Add 20g olive oil.

    Sauté 4 min/Varoma/speed soft.

    Meanwhile, whisk milk, butter and eggs together in a jug.

    Add milk mixture, 150g plain flour, 3 tsp baking powder, 100g corn kernels, pepper to taste, dried parsley to taste and reserved cheeses to bowl.

    Mix on 3 sec/dough, assisting with spatula.

    Use spatula to incorporate anything not mixed.

    Spoon into muffin tins and bake for 25- 30 minutes or until golden.

    Serve warm, split in half with butter.

Tip

At step 8, you can change up the ingredients. eg: Make them Mediterranean with olives, sun dried tomatoes and feta cheese.

    So simple. I didn't have corn, however instead I grated for 4 seconds a combo of veggies; capsicum, carrot and zucchini. Cooked for same amount of time.

    These muffins are a great breakfast alternative and easy to make. They were not quite cooked in the middle so I will reduce the baking temperature to 180 degrees when I make them again.

    Awesome. The lightest, fluffiest muffin inside. Outside was crunchy. They lasted an hour in our house of 4. I used self raising flour instead due to laziness

    Quick, easy and very yummy. I cooked mine at 200 degrees fan forced and they were a tad undercooked on the inside so I'll adjust my oven temp accordingly next time. I got 12 muffins out of the batch and for anyone calorie counting mine came to 200 calories per muffin.

    You could use SR flour, but I'd add 2 tsp baking powder as well due to the heavy ingredients.

    Really, really good. I used 2/3rds creamed corn (to use up) then some frozen peas, corn and corrot mix. Slightly less milk, added garlic and chives. Made 12 muffins and 12 mini muffins. Delish! Thanks fpr posting. tmrc_emoticons.)

    The recipe uses baking powder, not bi-carb soda, so that's perhaps why you could taste it.

    Yum,  these were so easy and tasty. I put the milk butter and eggs into the thermo to mix for a few seconds before adding the remaining ingredients rather than mix them separately before adding.  Saves washing up another bowl and turned out fine.  tmrc_emoticons.)
