Broccoli Bread
- 500 g frozen broccoli, thawed and drained
- 1 bunches fresh chives
- 1 bunches fresh dill
- 1/4 bunches fresh parsley
- 100 g almonds
- 4 eggs
- 1 tsp Vegetable stock paste
- ground pepper

- Preheat oven to 180C.
Spray a swiss roll tin with oil. - Mill almonds for 8 seconds on speed 7 and set aside.
- Add broccoli to mixing bowl and chop for 10 seconds on speed 6. Scrape sides of bowl.
- Add herbs and chop for 5 seconds on speed 6. Scrape sides of bowl.
- Add almond meal, vegetable stock paste and pepper and mix for 10 seconds on speed 4.
- Add eggs and mix for 15 seconds on speed 4. Scrape down sides and mix again for 10 seconds on speed 4 or until evenly combined.
- Spread mixture evenly on prepared tray . Bake for 20-25 minutes or until golden and firm.
- Cool on a rack and then slice.
