Cheese and Bacon Mini Muffins

  • 200 g Tasty cheese, cut into 2cm pieces
  • 2 spring onions/shallots, cut into thirds
  • 220 g self-raising flour, or GF self-raising flour
  • 1/2 tsp salt
  • 1/2 tsp paprika, smoked, ground
  • 2 eggs
  • 250 g Milk, of choice
  • 150 g bacon, diced

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add Cheese and shallots into TM bowl Closed lid and grate 8 seconds / Speed 7
  2. scrape down bowl and stir off bottom of bowl
  3. Add flour, salt, paprika, eggs and milk to bowl
  4. Mix 15 seconds / Speed 4
  5. Add bacon and stir with spatula
  6. Mix 6 seconds / Reverse Counter-clockwise operation /speed 1.5
  7. Add spoonfuls of batter to mini muffin trays and bake at 180 deg C for 10-12 minutes or until golden and cooked through
