Cheese and spinach muffins

Ingredients

Muffins

  • 250 g packet of frozen spinach thawed
  • 250g g Self Raising Flour
  • 1/2 tsp ground nutmeg
  • 100 g cheddar or tasty cheese, cubed
  • 120 g fetta cheese, crumbled
  • 250 g Milk
  • 1 egg

Recipe's preparation

    Muffins
  1. Preheat oven to 200 deg C.

    Grease muffin tray.

  2. Grate tasty cheese 6sec/speed 8.

  3. Add flour, nutmeg and fetta cheeses. Combine 3 sec/speed 6/Counter-clockwise operation.

  4. Add milk, egg and spinach. Combine 3 sec/speed 6/Counter-clockwise operation.

  5. Spoon in to muffin tray.

    Bake 15 - 19 minutes until golden.

    Quick, easy, great for lunchboxes. Used ricotta instead of feta as that's what we had, worked well.

    Just made these - kids loved them despite telling me they didn't like green things! I used fresh English spinach as well and had to increase the cooking time by 5 minutes. They were lovely and moist though.

    Made these last night. Used fresh English Spinich. These were surprisingly good and easy to do for a beginner like myself. I'm loving my new ThermoMix, but my waist line is suffering
