Ingredients

Dough

  • 440 g pizza flour, or just plain
  • 250 ml warm water
  • 30 ml olive oil
  • 2 tsp sugar
  • 2 tsp dried instant yeast
  • 2tsp salt

chicken mix

  • 1 lt water
  • 3 skinless chicken breasts
  • 200g bacon
  • 360 g Mozzarella Cheese
  • 100 g parmesan
  • 1 bottle Paul Newman Caesar dressing
  • 1/2 tsp Chill flakes
  • Salt and pepper, to taste

Recipe's preparation

    Dough
  1. Lightly grease bowl with some olive oil. Set aside. Place water, sugar and yeast into jug and mix 20 sec / speed 2
  2. Add flour, oil and salt, Dough mode"Dough mode" 2 mins
  3. Transfer into oiled bowl wrap and place somewhere warm until doubled in size.

    (I fill my thermo server with boiling water, place it on the lower shelf of my cold over and place the wrapped bowl on the upper rack)
  4. Chicken Mix
  5. Cube your Parmesan, pop into your jug and grate 8 sec / speed 7

    Set aside in another bowl.
  6. Add water into bowl, season chicken breasts and add into Varoma dish. put Varoma dish and lid on the jug.

    25 min/ Varoma /speed 2

    Let chicken cool,

    Fry some bacon pieces (or if you cant be bothered, chop up some ham)

    Pop cooled chicken into jug Counter-clockwise operation"Counter-clockwise operation" 7 seconds / speed 4 (make sure it is in reverse)

    Add most of the grated mozzarella and parmesan (save some to sprinkle later) add chilli flakes and more salt and pepper if you want, and add bacon (or ham if that's what you prefer). Gentle stir setting"Gentle stir setting" 5 seconds
  7. Assemble
  8. Preheat over to 200 °C

    Divide dough into 100gm balls, (approx 7)

    Roll dough out into rectangles

    Get a pastry brush and brush dough with Paul Newman's dressing (like you are making a pizza)

    Divide the chicken mixture equally, and spread over the dough - leave space on the sides so you can roll and tuck them into shape.

    Fold the dough over like you are making a burrito

    Transfer to lined baking sheets.

    Brush the top with Paul Newman dressing and top with the remaining cheeses

    Bake at 200°C for 17 minutes.

    Get ready for the kids to fight over them...

    Try to let them cool for a bit before you smash them!!!

Tip

If you want it creamier - you can add a bit of cream cheese too.

Add more or less chilli flakes, depending on taste.

To make it easier you can use roast chook and ham instead of steamed chicken and bacon.

If you want to get crazy you can add some Franks hot sauce if you like a bit of spice.

It is way easier to assemble the bake if the chicken mix is cool/cold.
