Curried Coconut

Ingredients

curry powder (optional to make)

  • 1/2 tablespoon ground cardamon (Or 4 pods)
  • 1 tablespoon black peppercorns
  • 1/2 tablespoon rock salt
  • 2 teaspoons ground tumeric
  • 1 teaspoon ground ginger
  • 3 level tablespoons chilli flakes (more or less to taste)
  • 2 teaspoons garlic granules

Coconut

  • 250 grams coconut flakes
  • 2 egg whites
  • 3 teaspoons curry powder (made or bought)

Recipe's preparation

    Curry powder, (you can just use store bought it you want)
  1. Heat oven to 180o

    Add all curry ingredients to the Closed lid. Dry raost for 8mins/Varoma/spped 2.

    Allow to cool than 1min/speed 10

  2. In a clean dry Closed lid add the 2 egg whites and the butterfly. 2mins/speed 4, it shoud look like this

  3. Add curry powder and mix for 8 secs speed 2. Remove whisk. Add cococnut and combine for 8 secs/rev/speed 2.

    Line onto a baking tray or Thermomat and cook for 12-18 mins till golden. 

  4. Store in an airtight container. You should have some curry left over for another time.
