  • 120 g Butter, cubed, slightly soft
  • 40 g icing sugar
  • 40 g curry laksa paste
  • 10 g Curry Leaves, fresh or frozen
  • 1 egg yolk, mix with 1/4tsp water for egg wash

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. 1. Add the leaves into TM bowl and chop for 5s Speed 7.
    2. Add plain flour, butter, sugar and paste into TM bowl and mix for 30s Speed 6.
    3. Tip onto a well-floured cookie mat. Pick out all fibrous bits of the curry leaves. Knead into a ball.
    4. If the dough is too soft to handle, chill the dough for 30mins. (optional step)
    5. Preheat oven to 170degrees Celcius. Line 2 baking trays with baking paper.
    6. Roll out to 5mm thickness and cut using desired cookie cutter. Brush cookies with egg wash.
    7. Bake for 12-15mins until slightly brown.

Tip

Butter (is it soft enough?) - when I see a slight dent from pressing with my finger then it's soft enough for me to use.

Experiment with different curry laksa paste and see whether there's any particular brand that you'd prefer. I use Osha Curry Laksa Paste.

Adjust the quantity of the curry leaves and the paste if you prefer a stronger flavour.

Be generous with flouring your cooking mat should you wish to skip chilling the dough.
