Ingredients

GlazBro Silverside

  • 2000 gram corned beef silverside, to fit comforatbly in Varoma Dish
  • 1 onions, halved
  • 1 celery stalk, roughly chopped
  • 1 carrot, roughly chopped
  • 1 level tbsp vinegar, malt
  • 1 level tbsp brown sugar
  • 2 bay leaves
  • to taste whole cloves
  • to taste peppercorn, white, whole - any time you like
  • 1 heaped tsp Vegetable stock paste, (thermomix or other)
  • 1 litres hot water
  • potatoes, quatered
  • stalks parsley
  • 2 onion, whole
  • carrots, chuncked
  • pumpkin, chuncks
  • cauliflower floret
  • broccoli florets

Sauce

  • 400 g cooking liquid, reserved and strained
  • 50 grams Butter, or nettelex
  • 40 grams plain flour
  • 100 grams Milk, or cream (optional)
  • 1-2 tablespoons Dijon mustard, or seeded
  • to taste salt
  • to taste pepper, ground

Recipe's preparation

    Cooking liquid prep
  1. place 1 x halved onion into bowl
  2. 1 stick of celery roughly chopped into Thermomix bowl
  3. 1 large carrot roughly chopped into Thermomix Bowl and place Measuring cup in lid
  4. Closed lid"Closed lid"
    3 seconds
    speed 5
  5. remove measuring cup
    add 2 bayleafs
  6. add 1 level tablespoon brown sugar
  7. add 1 level tablespoon malt vinegar
  8. Add parsley stalks, whole cloves, and peppercorns to taste
  9. Add 1 heaped tablespoon of Vegetable Stock Concentrate
  10. Add 1 litre of Hot water and place Lid onto bowl, place Varoma Bowl on top.
  11. Varoma Prep
  12. Rinse Silverside well under cold water
  13. Place trivet over holes in Varaoma to ensure silverside doesnt block holes
  14. place silverside ontop of trivet - ensure Varoma lid will fit
  15. Ensure there is plenty of room around the sides to allow the steam to come thru the holes in the Varoma Tray.
    Note: the meat will swell as it cooks

  16. Add onions to varoma, place lid on Varoma
  17. Cooking Silverside
  18. 60 min / 160°C / speed 2
    NOTE: This is the starting cook.
    Cooking time will. vary depending on the size of your silverside
  19. calculate extra time required for the weight of your meat (2kg)
    60 min / 160°C / speed 2
  20. to make it extra tender now add an Additional 30 min / 160°C / speed 2
    I like to add my harder vegetables around the silverside at this time (chunks of pumpkin / potato/ sweet potato / carrot etc)
  21. add softer vegetable on top of harder vegies ( cauliflower etc)
    top up water in bowl if requried

    30 min / 160°C / speed 2
  22. removed cooked vegetable and place in Thermoserve
    cover Silverside with foil to keep warm
  23. Sauce
  24. Strain liquid from the thermomix bowl using thermomix strainer and reserve liquid (discard solids)
  25. place 50 grams butter into bowls
  26. place 40 grams plain flour into bowl
  27. mix 5 seconds / speed 5
  28. cook 5 minutes / 100°C / speed 2
  29. cook 7 minutes /100°C / speed 4
  30. add cream or milk (if using 100gms)
  31. add 1 - 2 tablespoons dijon or seeded mustard
  32. add additional reserved liquid if sauce is too thick
  33. cook 3 minutes / 100 °C / speed 4
  34. Serve
  35. Slice Silverside serve with vegetables and sauce
