Mini Zucchini Slice Bites

  • 2 medium zucchinis
  • 2 carrots
  • 1 onion
  • large handfull of ham (about 250g) or bacon
  • 3 eggs
  • 2 tbslp veggie stock
  • 30g olive oil
  • 1 cup plain flour
  • 50g cheese

Recipe's preparation

    • 1. Pre heat oven to 180C. I then spayed some mini muffin trays with some olive oil.
    • 2.Place zucchinis, carrots and onions in the jug and mix 3 secs/speed 5. Set aside into a large bowl.
    • 3.Now grate the cheese for 3-4 secs/speed 5 and add this to your large bowl.
    • 4.Dice your ham and add to your large bowl along with the rest of your ingredients. Mix well with a fork.
    • 5.Place spoonfulls into your prepared trays and bake for 15-20 minutes or until well cooked.

    Fantastic recipe! I added some sweet corn & went light on the stock paste to keep the salt down, but delicious!! Would even work well as a pre dinner snack with a drink! Thank you for sharing!

    OMG! Soooo yummy. I fried the bacon and onion first because I like the sweetness cooked onion gives these type of dishes. Added corn too. Kids love them!

    only thing I will try different next time is adding corn kernels for a little more flavour.
