Pumpkin, Chickpea, Pesto & Cheese Scrolls

Ingredients

12 portion(s)

Pesto

  • 50 g Parmesan cheese, cubed
  • 1 large garlic clove
  • 1 red chilli fresh (optional), deseeded if you prefer
  • 1 bunch fresh basil
  • 100 g extra virgin olive oil
  • 60 g pine nuts, you may like to lightly toast before hand
  • salt & pepper, to taste
  • 1 tablespoon lemon juice, (optional)

Pumpkin & Chickpea Bread Dough

  • 100 grams dried chickpeas
  • 100 grams butternut pumpkin, roughly chopped
  • 400 grams bakers flour
  • 20 grams EVOO (extra virgin olive oil)
  • 1 tsp salt
  • 220 grams lukewarm water
  • 20 grams pepitas
  • 1 Yeast Sachet, (about 7g)

Scrolls

  • 100 grams cheese, roughly cubed

Recipe's preparation

    Pesto
  1. Place parmesan cheese into TM bowl & process 5 secs on speed 10.

    Add all other ingredients & process for 10 seconds on speed 10.

  2. Chickpea & Pumpkin Dough
  3. Process chickpeas for 1min at speed 10

    Add pumpkin & process for 5 secs on speed 5.

    Add remaining ingredients & process 5 secs on speed 5. Set timer for 1.30mins Closed lidDough mode. Add extra bakers flour if dough is too sticky. Rest dough for 30 mins.

  4. Scrolls
  5. Roll dough into a large rectangle shape & spread with pesto & cheese (that has been grated for 5 secs on speed 10)

    Then roll into a long scroll shape cut into 12 scrolls.

    Allow to prove for 1/2 hour & then place onto tray lined with baking paper & bake for 20 - 25 mins at 200 degrees or until brown.

    ArwensThermoPics: thanks for that comment. I was scrolling through the comments to check that the recipe was indeed asking us to grind up dried chickpeas and whether we could just use chickpea flour instead. It's a staple in my pantry anyway.

    Great recipe. Thanks for sharing this.Terrific for school lunches as the bread base is much more substantial compared to just using plain flour. Great flavour. Will use this recipe with other lunch fillings as well.

    Wow these were amazing! So yummy and nutritious. My four year old kept saying hmmmm yummy..... hmmmm yummy.... Mommy can you make these everyday? Well maybe not everyday but i'd love to make these weekly! What a healthy snack. I've even told my son when he goes to school one day I will make sure I pack a couple of these in his lunchbox tmrc_emoticons.)     Yum Arwen this is a great recipe!  So delicious, I've had lots of people ask for the recipe.  I used a can of chickpeas and added about an extra 100g of flour.  If you have time it is definitely worth making the pesto yourself too tmrc_emoticons.)

    I love this scroll dough recipe, I use it often and the kids love it!


    I use tinned chickpeas (cause it's easier) and just use a little less water to compensate. It still does often need a little more flour. Then once the dough is kneaded and risen I roll it out and put either vegimite and melted butter with a little bit of grated cheese on, or sliced ham and grated cheese.


    They are delicious and the full of fibre, the kids love them and they freeze well, thanks tmrc_emoticons.)

    These were delicious, my kids couldn't get enough of them.

    Changed a couple of things, I used GF flour, I didn't have pumpkin so just substituted sweet potato and I cheated and used ready made pesto. 

    Will absolutely make again.

    I am so sorry Gail, I have fixed the recipe, it appears one of my edits didn't go through. I add the pepitas to the dough but you could also sprinkle them on top of the pesto. I hope you enjoy them, thank you for bringing my attention to the missing parts.

    These look great but a couple of questions.  Should there be yeast in the dough?  Are the pepitas added to the dough or sprinkled on later?  I am guessing the remaining dough ingredients are added after the pumpkin is processed.
