Savoury Corn Muffins

Ingredients

  • 400gm can corn kernels
  • 120 grams Tasty cheese
  • 260 grams S.R . flour
  • 1 stalk Spring Onion/Shallots, optional
  • 2 rashes of short cut bacon, optional

Recipe's preparation

  1. Pre-heat oven to 180 degrees.

    1. Grate cheese, speed 8 for 5 seconds, set aside.

    2. Place Corn  (with liquid) and spring onion (if using) in TM bowl. Cream on speed 7 for 4 seconds. scrape bowl down, add bacon (if using) speed 7 for 2-3 seconds.

    3. Add cheese and flour  Mix speed 7 for 3-5 seconds until it has all come together.

    4.Place in silicon muffins pans and bake for 15-18 mins or until golden brown on top.

    Makes 12 cupcake size muffins

    *Note, because of the amount of cheese in these do not put them in muffin papers as they will stick. I find the silicon trays the easiest to use, if you use metal trays grease well.

I added a sprinkle of smoked paprika as well just to bring out the flavour in the corn... Going to make a big batch on the weekend to freeze for the kids and I might even get adventerous and add in some thyme as well... Yum!

  • I adapted the recipe because

    I adapted the recipe because I did not have some of the ingredients.

    However, they turned out great, delicious in fact.

    Didn't have spring onions or shallots, substituted a small brown onion.

    Only had 250g of Corn kernels instead of 400g.  Also I thought the dough a little dry so dribbled a small amount of milk

    in.  Cooked them in a 12 hole muffin tin for approximately 20minutes and had a little dough left over so used a patty cake

    pan for remainder and cooked for 12 minutes. Thank you for listing the recipe
