  • 120 g cheddar or tasty cheese, cubed
  • 80 g Butter
  • 440 g self raising flour
  • 1 teaspoon salt
  • 380 g buttermilk
  • 50 g bacon or ham, finely diced

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cheese Scones
  1. Preheat oven to 220C.  Line a baking tray with non stick baking paper.

  2. Place both measures of cheese in TM bowl and grate for 6 seconds on speed 8. Remove 120g of cheese. Add butter, mustard and cayenne pepper, mix for 6 seconds on speed 6, or until combined.  Set aside.  No need to wash the bowl.

  3. Add to the 120g of grated cheese, flour, salt, 80g butter, diced bacon into TM bowl and mix for approx. 8 seconds on speed 8, or until mixture resembles breadcrumbs.

  4. Add buttermilk, and mix for approx. 8 seconds on speed 5, until dough almost comes together.

  5. Set dial to closed lid position and mix for 20 seconds onDough mode dough setting to form a soft and sticky dough.  Place on a lightly floured surface or thermomix mat and press out to 2.5cm thick and square shape.

  6. Spread the reserved cheese & butter mixture over the top & cut into 16 pieces. Bake for 16-20 minutes, or until golden on top.

  7. Serve warm with homemade butter.

Tip

Make quick buttermilk by adding 20g of white vinegar or lemon juice to whole milk and let sit for 10 minutes until the curds & whey start to separate.
