  • 6 pieces shortcut bacon rashers
  • 15 g baking powder
  • 350 g plain flour
  • 3 spring onions, chopped into 5cm sections
  • 1 bunch fresh dill
  • 1 zucchini, roughly chopped
  • 200 g Cheddar cheese, or a mix or cheddar & parmesan
  • 100 g Butter
  • 200 g Milk
  • 3 eggs

Recipe's preparation

    Bacon, Cheese & Zucchini prep
  1. BACON


    Place Roughly Chopped Bacon in TM bowl.


     


    Chop 2 secs/ speed 7


     


    Scrape down sides


     


    Chop further 2 secs/ speed 7


     


    Add a spoon butter or oil


     


    Saute 3 mins/ Varoma temp/ Speed 1


     


    Set aside in a bowl


     


    You DO NOT need to wash the bowl out between any of the following steps!

  2. CHEESE & ZUCCHINI


    Add butterfly


    Add


     - Melted butter


     - Milk


     - eggs


    mix 5 secs/ counter-clockwise operation reverse/ speed 4

     - Milk

    mix 5 secs/ counter-clockwise operation reverse/ speed 4

  5. Dry Ingredients
  6. Weigh into TM bowl


     - plain flour


     - baking powder


    Mix 10 secs/ counter-clockwise operation reverse/ speed 4


    Scrape down sides of bowl


    Mix 15 secs/ counter-clockwise operation reverse/ speed 4 (Check your mix at this point, you may need a few more seconds)


    Spoon into mini or large muffin cases and bake at 180deg - approx 20 mins for mini or 25-30 for large.


    An additional 5-10 mins for loaf tin, use a skewer to test for uncooked dough to prevent overcooking.

Tip

I used a loaf tin instead of large muffin tins so I can toast the slice for breakfast.

This mix made about 12 mini muffins and 1 loaf.

If you don't have silicone tins, then make sure you use cupcake papers or baking paper as the cheese will definitely stick to metal tins.

They are great in lunch boxes or for breaky on the go and can be frozen.
