      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add Nuttelex, sugar and vanilla paste to bowl and mix 10 sec, speed 4, MC on.
  2. Add GF flour, Tapioca starch and buckwheat flour and mix 10 sec, speed 4, MC on.
  3. Scrape down sides and mix 5 sec, speed 4, MC on.
  4. Roll into small balls and place on a lined oven tray.

    (The mixture will be quite sticky so roll with wet hands or lightly dusted with rice flour, just be careful not to add too much flour and make the mixture dry). Press a thumbprint into each biscuit and fill with jam.
  5. Bake at 170°C approx 12-15min. Be careful not to over cook or they will be very dry.

Tip

I use my own gluten free flour mix for these, which is also here on recipe community. My favourite jam to use is the Berry Chia Jam from Sweet Nourish by Louise Keats, which can be found in the Mix Shop or Cookidoo.

These are great with Lemon curd too.
