Almond, Apricot and Banana Loaf

Dough Mixture

  • 60 grams almonds
  • 100 grams dried apricots
  • 2 bananas
  • 40 grams unsalted butter
  • 100 grams buttermilk
  • 260 grams plain flour
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoons baking powder
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 teaspoon Nutmeg
  • 60 grams brown sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Pre heat oven 180 degrees.

    Grease a loaf tin. Not a jumbo size one.

    Chop almonds and apricots 4 seconds at speed 6.

    Add 2 bananas and blend 4 seconds at speed 4.

    Add softened Butter and Buttermilk and cook 3 min, 100 degrees, speed 2.

    Add Flour, Egg and all other ingredients. Mix 20 sec speed 4.

    Add mix to greased loaf tin and bake 50 to 60 minutes at 180 degrees.

If you want a nuttier loaf you can add up to 80 grams of Almonds.
