Apple and custard tea cake

Ingredients

custard

  • 55 grams caster sugar
  • 35 grams custard powder
  • 220 grams Milk
  • 1 teaspoon vanilla
  • 20 grams Butter

Cake

  • 200 grams Butter
  • 130 grams brown sugar
  • 2 eggs
  • 300 grams SR flour
  • 100 grams Milk
  • 2 large apples, peeled, cored and thinly sliced
  • 2 heaped teaspoons caster sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon icing sugar, for dusting
  • cream and/or icecream to serve, optional

Recipe's preparation

    Custard
  1. 1. Place all the ingrdients into the Closed lid, except for the butter.

    2. Cook at 90C/sp4/5-7 minutes until thickened. Stir through the butter, sp4/10 seconds.

    3. Scoop into a bowl, cover with greased cling wrap and set aside.

  2. Cake
  3. Preheat oven to 180C. Grease and base line a 20-22cm springform pan.

    1. Cream butter and sugar sp4/30 secs. Scrape and repeat for 20 seconds.

    2. Add remaining ingredients (except for apples, cinnamon and sugar).

    3. Beat for 1 minute/ sp4.5.

    6. Spoon 1/2 mixture into the prepared tin.

    7. Spread the custard over the dough and smooth out.

    8. Fan the prepared apples evenly over the top of the custard and sprinkle with the sugar/ cinnamon combo.

    9. Top with the remaining cake dough, smoothing out as much as possible. Don't worry if some apple pokes through.

    10. Bake for 55-60 minutes or until cooked when tested.

    11. Leave in pan to cool.

    12. Dust with icing sugar to serve.

    This cake was a hit! Turned out perfectly - super moist, and perfect with a dollop of cream. I chopped the apples in the TM to save time and made the TM custard recipe and used half for the cake but next time will add more. Will be making this again.

    Yum! I made the custard I usually make in the thermie and it makes about 500ml. Used half the sugar in the custard and cake as personal preference. Didnt dust the top with icing sugar. This tasted so good. Would be nice with brown sugar and cinnamon topping.

    Made this tonight for dessert... THANK YOU!!! We loved it, hubby says he's been dreaming of this since he was a boy. haha
    I made automatic custard instead, chose 3-4 and thick, but changed ingredients to 400g milk, 50g sugar, 40g cornflour, 2 eggs, 5g vanilla . Worked out to be the perfect ammount and not too sweet, the cake and the sugar/cinnamon mix are the sweeter elements.
    Will make this often

    So yummy! Didn't have any vanilla so used a bit of vanilla paste in place of, and was so delicious!

    I put the fillings into a greased muffin tin and came out like little muffins, with the custard and Apple inside! Perfect portions for the kids. Great recipe, will make again for school lunches!

    I made this cake today for 10 hungry mouths and the comments were "best cake you've ever made mum", "please make that one for my birthday"... I didn't have a 20cm cake tin, only a 25cm round. So I made the custard on the chip (3-4 portions, thick and creamy). Then one and a half times the rest of the recipe. It made a bigger cake. We fed 10 people and had some left over! Great cake. Thanks

    Lovely..will definately make again.  Followed the recipe exactly and got perfect result.   The brown sugar made for a different taste and texture.  Served warm with dollop cream.  Would be lovely with pouring custard over top.

    I made this yesterday and it worked a treat! I don't have custard powder so used 3 teaspoons of cornflour and an egg, got a nice thick custard which worked great.

    The cake tasted great too, will make again

    It needs to be a fair thick style of custard, so if the one you normally make isn't that thick you may want to add extra cornflour.
