  • 20 grams Coconut, Shreaded
  • 130 grams Butter, softened
  • 100 grams sugar
  • 1 heaped teaspoon cinnamon
  • 330 grams Self Raising Flour
  • 2 eggs
  • 100 grams light sour cream
  • 100 grams Milk
  • 50 grams chia seeds, (optional)

Recipe's preparation

  1. 1. Add Apples, Dates, Coconut to bowl 6 Sec/ Sp6. Set Aside

    2. Add Butter, Sugar, Self Raising Flour, Eggs, Sour Cream, Milk mix 20 sec/  sp 5

    3. Add Apple mix, Chia Seeds and Cinnamon mix 5 sec/sp 5

    4. pour into muffin trays Bake at 180deg for 35 min. or until Golden Brown

    I replaced the eggs with chia seeds as I have a little guy with an egg allergy. I also used 85g rice malt syrup instead of sugar. Yummy!

    I didn't have any chia seeds but will get some for next time.
    Makes heaps so I froze half the mix, so it'll be interesting to see how that batch will go Cooking 7 when the time comes.

    Beautiful, adding the chia seeds is a must. The nicest apple muffin I’ve made in a while. I also used spelt flour with some baking powder added. Thanks for sharing.

    These are so good! I am adding them to my school muffin rotation. I made a couple of changes:

    60grams butter and added 70grams coconut oil

    50grams of brown sugar (it was all I had open)

    160grams of greek yogurt and 60 grams of milk

    added chia (it does make them crunchy and yummy)

    it made 12 large muffins and 36 mini muffins 

    will next time use wholemeal self raising

    Great recipe. I added 120g of sour cream, and only 30g chia, and substitued the sugar for 80g of rapadura. It was tasty! I forgot to add the cinammon though tmrc_emoticons.( next time.

    These were so yummy. Left the sugar out and they were yummy. Also only had kefir milk so used that instread of the sour cream and milk. Made them for friends today. Now about to make another batch for the kids. Might try coconut oil instead of butter.
