Donuts
- 100 grams raw sugar
- 75 grams Butter
- 1 egg
- 280 grams plain flour, (or equivalent to 1.5 cups)
- 2 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 125 grams buttermilk (or regular milk & a tbsp vinegar)
Topping
- 60 grams Butter
- 80 grams raw sugar
- 1 tablespoon ground cinnamon
Recipe's preparation
Preheat oven to 170 degreees. Lightly grease a donut tray (or a muffin tray works well to make donut puffs).
Mill sugar for 3-4 seconds on speed 9
Add butter and mix for 30 seconds on speed 5, or until light and creamy.
Add remaining ingredients and mix for 10 seconds on speed 4.
While donuts are baking, melt butter for 2-3 minutes at 50 deg on speed 1. Set aside in a bowl.
Combine sugar and cinnamon in a bowl and set aside.

I made these tonight with my daughter. We used gluten free plain flour, nuttelex instead of butter and made our own non-dairy buttermilk and we were really happy with how they turned out. We did have to add some extra milk to the mixture as it was very thick but that was probably because of the gluten free flour.

Mine didn't work out - they
Mine didn't work out - they were very cake like rather than donut like - I made medium sized and small sized ones in a muffin tin. The mixture felt very heavy and thick before cooking but I didn't want defer from the recipe. The donuts were white but cooked and covered well with the butter and sugar/cinnamon. any idea where I may have gone wrong ?

These are yummy and so easy.
I used Orgran Gluten Free Flour. I found they didnt brown up (but this might be the GF Flour), though they were cooked and with the Topping, you wouldnt know they were still pale.
I cooked them in muffin tins. I got 18 golf ball sized (hand rolled, then flattened) donuts.
My suggestion would be to halve the Topping ingredients. I have loads left over that will now just go in the bin.
My kids could only manage one each as they were too sweet for their taste buds (though I managed about 4!). I will put the rest in the freezer and see if they could work as an occasional lunchbox treat.
