Banana Loaf
Loaf Batter
- 3 bananas, large and over ripe
- 150 grams white sugar
- 150 grams Butter
- 2 eggs
- 120 grams plain flour
- 120 grams self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 1 level teaspoon baking powder
- 30 grams Milk
- 1 teaspoon vanilla essence

Recipe's preparation
- Line a large loaf tin with baking paper
Preheat Oven to 160 c - put bananas in bowl
mix,
5 seconds, Speed 4 scrap into small bowl - dont bother washing bowl
add sugar and butter.
mix,
20 seconds, speed 5 - add eggs one at a time.
mix,
5 seconds, speed 5
for each egg - add banana mix and Vanilla essence.
mix,
3 seconds, speed 5 - add both flours, baking soda, baking powder and milk.
mix,
15 seconds, speed 4
if needed scrap down sides of bowl and mix,
15 seconds, speed 4 - pour batter into prepared loaf tin and bake for 45 minutes to 1 hour. remove loaf from oven when it is cooked when tested.
leave to cool on wire rack
turn out and enjoy
