Big banana bread

Ingredients

Dough

  • 60 grams walnuts, optional
  • 140 grams brown sugar
  • 115 grams Butter
  • 340 grams bananas, peeled weight, roughly 500g unpeeled
  • 2 eggs
  • 85 grams honey
  • 270 grams plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarb soda
  • 1/4 teaspoon nutmeg ground
  • 1 teaspoon cinnamon ground
  • 1 teaspoon Vanilla Paste
  • 65 grams Marmalade, adds extra moisture..not noticeable in flavour

Recipe's preparation

    Method
  1. Preheat oven to 180C.

    Grease and line a large loaf tin.

    1. Chop walnuts, sp4 / 5 seconds ( if using) and set aside.

    2. Add remaining ingredients to bowl ( no need to wash) and blend 20 secs / sp4. Scrape and blitz again 10 secs / sp 4.

    3. Return walnuts to bowl and combine Counter-clockwise operation, sp3 / 7 secs.

    4. Spoon into prepared tin, smooth top and bake for app. 45-50 minutes or until done when tested.

    5. Cool in tin for 5 minutes before cooling on a wire rack.

Tip

YUM YUM YUM

What I really love about this recipe is that it uses a lot of bananas. Usually when you go to make a banana cake, the recipe calls for 1, maybe 2 bananas. You will need about 500g of unpeeled ones for this baby.

Serve it sliced and slathered in butter or for a taste sensation..a smear of quark and a sprinkle of cinnamon sugar. Wash it down with a cup of tea..heaven..

    Cooking 7MADE THIS BANANA BREAD TODAY.
    DIDNT HAVE MARMALADE, SO I ADDED MY OWN PLUM JAM.
    AND ONLY ADDED 100gm SUGAR, AS I THOUGHT IT WOULD BE
    SWEET ENOUGH. IT TURNED OUT TO BE A MASSIVE CAKE.
    JUST HAD A SLICE AND ITS YUM!
