Lemon and blueberry loaf
- 1 lemon rind
- 150 g caster sugar
- 3 eggs
- 125 g natural yogurt
- 40 g oil, E.g: Sunflower
- 230 g plain flour
- 1 level tbsp baking powder
- dash vanilla extract
- 1 package Cottees Instant vanilla pudding, See photo above
- 125 g blueberries
- 2 tablespoons flaked almonds
- icing sugar, To dust
- whipped cream, To serve, optional

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Preheat the oven to 170°C/ 160°C FF.
Grease and line a loaf tin.
1. Blitz the sugar and lemon rind
(MC in). Scrape.
2. Add the eggs, 40secs/sp4
3. Add the yogurt, oil, flour, baking powder and pudding mix.
Blend 40secs/sp4. Scrape.
4. Add the blueberries, (reserve 1 tablespoon for sprinkling on the top). 10secs/"Counter-clockwise operation" /sp3. Combine further with the spatula if necessary.
5. Pour/spread into the prepared pan and sprinkle over the reserved blueberries. Sprinkle over the flaked almonds.
6. Bake for around 50-60mins or until cooked when tested.
7. Cool in the tin for 10 minutes before cooling on a wire rack.
8. Dust with icing sugar and serve with a dollop of whipped cream if you like.
