Blueberry Muffins

Ingredients:

  • 90 g Butter, chopped
  • 200 g Milk
  • 1 egg
  • 100 g sugar, of choice
  • 230 g self-raising flour
  • 100 g blueberries, fresh or frozen (thaw frozen berries before use)

Recipe's preparation

    Blueberry Muffins:
  1. Preheat oven to 200 degrees celsius and grease a 12-hole muffin tin or line with muffin papers.

     

    1. Melt butter 2 min/80 deg/speed 2.

     

    2. Add the remaining ingredients to the bowl (except blueberries) and mix for 15 sec/speed 3. Scrape down bowl and mix for a further 
    5 sec/speed 3.

     

    3. Add blueberries and mix for 5 sec/Counter-clockwise operation/speed 3.

     

    4. Divide mixture evenly among the muffin tin.

     

    5. Bake for 15 minutes, until muffins are golden brown and spring back when lightly touched.

     

    6. Cool in tin for 5 minutes before turning out onto a wire rack.

    These are great and demolished quickly! I did a double batch, but the blueberries ended up very uneven, so I'd say better to do two separate batches. Have popped half in the freezer and they're ready for school lunchboxes!

    These muffins were delicious! Super easy to make. My only recommendation is, make two batches as the first one wont last long. My first batch was devoured as everyone loved them. Thank you for sharing.

    Easy peasy! They turned out lovely and light. I didn't have any SR flour so used plain flour, 2 teaspoons baking powder and a pinch of salt. Great for freezing and putting into kids' lunchboxes.

    Whipped up a batch of these this afternoon and officially have a new favourite go to recipe for muffins!  I used coconut milk in place of normal cows milk.  Lovely light and fluffy muffin, I am going to use Raspberries next time I make these.

    I used 100g normal SR flour and 130g wholemeal SR flour and 120g blueberries just for a bit more fibre and cooked for about 15mins longer and they're perfect tmrc_emoticons.)

    Winner!  I added about 40g of desiccated coconut, used raw sugar reduced to 70g and increased the blueberries to 140g.  I threw the blueberries in frozen, and they came out perfectly.  My mixture made about 30 mini-muffins - cooked at the same temperature for 10-14 minutes.  Can't wait to try these with all sorts of different fruits!  Thank you for a great recipe!!  tmrc_emoticons.)

    I have now made these twice and they are awesome, soft and fluffy. I also used 140grms of frozen blueberries and cooked for 2 minutes longer. I put in bigger muffin trays so only got 9 muffins, but this is now my go to recipe. Thanks so much for sharing   tmrc_emoticons.)

    Delicious muffins. I also did not defrost the berries. However i would recommend waiting before tipping out the muffins, maybe10 mins so they don't go all mushy and break. I say TIPPING because they should fall out easy without having to use a knife.

    Very light and fluffy. I mixed mine longer and on a higher speed to combine the flour.

    Delicious.  Dont need to defrost blueberries,  worked fine frozen.  I added extra blueberries - 140g so there were more in each muffin.  Cinnamon and sugar sprinkled on top adds a little spice and colour. tmrc_emoticons.)
