Blueberry Yoghurt Muffins

  • 100 grams oil
  • 1 egg
  • 250 grams plain yoghurt
  • 1/2 teaspoon salt
  • 125 grams sugar
  • 1 teaspoon ground cinnamon
  • 250 grams flour
  • 4 teaspoons baking powder
  • 300 grams blueberries

Recipe's preparation

    Blueberry Yoghurt Muffins
  1. Mix all ingredients except blueberries on speed 4 for 20 seconds.

  2. Add blueberries and mix speed 4 reverse for 5 seconds

  3. spoon into muffin cases and bake 220 degrees for 12 - 15 minutes

Tip

    These muffins were perfectly delicious and super easy to make! I cooked them at 200C fan for just over 20 minutes. I used coconut yoghurt and added vanilla instead of cinnamon. I also used SRF with a heaped tsp of baking powder (instead of the PF and 3tsp baking powder) as I have a glut of SRF to use up. My family gave them 10/10!

    Made these this morning, simple, quick delicous. Made them as mini muffins and adjusted the timing to suit - oddly they needed longer than I imagined. A white chocolate drop on top was a delicious, sneaky addition...
