Breakfast Muffins

Ingredients

batter

  • 1 apple
  • 1 carrot
  • 350 g Milk
  • 40 g coconut oil
  • 1 egg
  • 20 g Desiccated Coconut
  • 180 g sugar raw
  • 330 g Self Raising Flour
  • 80 g sultanas

Recipe's preparation

  1. Preheat oven to 200 C.


     


    Add carrot and apple to TM bowl and grate 4 sec / Sp. 6


    Add all other ingredients to the bowl, (first the liquid ones, flour last) mix for 5 sec / reverse / Sp 4 scrape down the bowl then mix again  5 sec / reverse / sp 4


     


    Divide the batter  into Muffin trays and bake in oven for about 15-20 minutes.


     


    Once cooked let cool slightly then take the Muffins out of the mould and let cool completely on a wire rack


    Tastes great with the Everyday Cookbook cream cheese frosting.

Tip

The self raising flour can be supplemented for plain flour and 2 tsp baking powder or half half spelt and plain flour with baking powder.

 

Add seeds eg.chia, pumpkin, sunflower

 

Reduce sugar and supplement with honey.

    I've made these twice today, they were enjoyed by family and friends! Excellent for breakfast and/or the school lunchbox. I love the coconut oil. I'm going to substitute it in my other recipes. Thanks for posting  tmrc_emoticons.)
