- 100 g raw sugar
- 50 g rice flour
- 260 g plain flour
- 225 g block butter
- 2 tablespoons small chocolate chips
- 1/2 teaspoon vanilla essence

Recipe's preparation
Heat oven to 160 C and line a baking tray with baking paper.
Add sugar to the bowl and semi-mill at speed 5/5 secs (having a slightly chunky sugar gives a nice texture to the shortbread)
Add rice flour, plain flour and butter to the bowl and mix for 15 sec/speed 6. Then knead 30 sec / /
Add choc chips and vanilla essence and knead for further 15 sec//
Carefully tip mixture onto a Thermomat or clean workbench, and roll into long strip. Flatten down to an oblong about 8cm wide by 3 cms high.
Bake in oven at 160o C for around 15-20 minutes until just going golden brown.
Remove from oven and allow to cool on a wire rack.
