Brown sugar and toffee cookies

175 g unsalted butter
180 g Dark Brown Sugar
1 tsp vanilla extract
1 egg
330 g plain flour
2 level teaspoons bicarbonate of soda
1 tsp cinnamon
0.5 tsp cornflour
0.5 tsp salt
125 g toffee sweets, Crushed into shards
125 g chocolate chips

  TM 5
  
  If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
  For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
  
  Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

Preheat oven to 180C no fan. Adid butter, sugar and vanilla to TM and mix for 1 min, sp 3-4. Scrape down.

With TM still running, add egg through hole in lid and continue mixing on speed 3-4 for 30 seconds.

Add flour, bicarb soda, cornflour, cinnamon and salt. Knead

45 seconds.

Add choc chips and toffee. Mix 30 seconds

sp 2.

Roll teaspoonfuls of dough and put on lined baking tray. Bake for 10-12 minutes. Let cool for 5 mins on tray before moving to cooling rack.
