Brown sugar and toffee cookies

  • 175 g unsalted butter
  • 180 g Dark Brown Sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 330 g plain flour
  • 2 level teaspoons bicarbonate of soda
  • 1 tsp cinnamon
  • 0.5 tsp cornflour
  • 0.5 tsp salt
  • 125 g toffee sweets, Crushed into shards

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 180C no fan. Adid butter, sugar and vanilla to TM and mix for 1 min, sp 3-4. Scrape down.
  2. With TM still running, add egg through hole in lid and continue mixing on speed 3-4 for 30 seconds.
  3. Add flour, bicarb soda, cornflour, cinnamon and salt. Knead 45 seconds.
  4. Add choc chips and toffee. Mix 30 seconds sp 2.
  5. Roll teaspoonfuls of dough and put on lined baking tray. Bake for 10-12 minutes. Let cool for 5 mins on tray before moving to cooling rack.
