Brown sugar and toffee cookies
- 175 g unsalted butter
- 180 g Dark Brown Sugar
- 1 tsp vanilla extract
- 1 egg
- 330 g plain flour
- 2 level teaspoons bicarbonate of soda
- 1 tsp cinnamon
- 0.5 tsp cornflour
- 0.5 tsp salt
- 125 g toffee sweets, Crushed into shards
- 125 g chocolate chips

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat oven to 180C no fan. Adid butter, sugar and vanilla to TM and mix for 1 min, sp 3-4. Scrape down.
- With TM still running, add egg through hole in lid and continue mixing on speed 3-4 for 30 seconds.
- Add flour, bicarb soda, cornflour, cinnamon and salt. Knead "Dough mode" 45 seconds.
- Add choc chips and toffee. Mix 30 seconds "Counter-clockwise operation" sp 2.
- Roll teaspoonfuls of dough and put on lined baking tray. Bake for 10-12 minutes. Let cool for 5 mins on tray before moving to cooling rack.
