Bushwalker Biscuits - Healthy Lunchbox Treat

Ingredients

Biscuits

  • 50 grams coconut oil
  • 120 grams Rapadura Sugar
  • 1 egg
  • 1 tsp Vanilla Bean Paste
  • 150 grams Self Raising Flour
  • 100 grams oats
  • 75 grams wild berry weetbix
  • 35 grams Shredded coconut
  • 70 grams sultanas
  • 30 grams Raw Honey
  • 1/2 tsp bicarb
  • 1/4 tsp baking powder
  • 1 pinch salt

Recipe's preparation

    Biscuits
  1. 1. Preheat oven to 180 deg

    2. Add oil, sugar, egg and vanilla to bowl and mix 10 secs/speed 4

    3. Add remaining ingredients and mix 10 secs/speed 4

    4. Grab small amounts of mixture and press together firmly to form balls

    5. Place on baking tray and bake for 15-20 mins

Tip

Use any form of weetbix if you don't have the berry variety. I save the crumbs at the bottom of every pack we go through!

    these were the perfect combination of all these flavours.  just delicious.

    I used butter instead of coconut oil and cornflakes instead of wheatbix.  big hit at our house.  will def be making again. thank you for sharing

    I make these with dates instead of sultanas, reduce the sugar (raw) to 50g and they turn out perfectly every time. My boys even made these to give to their teachers for little gifts and they were a big hit. Love Love Love this recipe. Love

    Yum!  I used plain weetbix, regular honey and raw sugar as that's what I had in the cupboard. I will decrease the sugar next time as they were quite sweet.  Baked for 15 minutes, perfect texture.

    These are really yummm, I cant stop eating them! I also used Wholemeal SR flour and plain wheetbix. I added a little extra of normal honey too. (didnt have raw)

    Next time instead of honey I'd like to use rice malt syrup.

    These are really easy and I had everything in the cupboard already. I used vanilla extract instead of paste though (not sure what effect this has). I think I baked them a bit too long (about 17 mins) because they are quite hard but they taste nice and the kids like them. Next time I'll take them out earlier.

    I made this with wholemeal SR flour and plain weetbix. I think they are sweet enough without the Wild Berry. I had to add 20g  extra coconut oil to get it to bind together with this combination. Myself and my kids love them tmrc_emoticons.)
