CCC Cookies - Cornflake, Chia and Choc (Fructose Friendly)

Ingredients

24 portion(s)

  • 120 g sugar, (Caster)
  • 120 g margarine, (DF)
  • 1 teaspoon vanilla extract
  • 150 g SR flour, (GF)
  • 15 g Milk, (DF)
  • 40 g Cornflakes
  • 35 g white chocolate bits, (DF)
  • 10 g chia seeds

Recipe's preparation

  1. Preheat oven to 180C

  2. Grind Sugar to Caster Sugar (3 seconds, speed 9)

  3. Cream Sugar, Butter and Vanilla (1 minute, speed 3-4)

  4. Mix in the SR Flour (10 seconds, speed 3)

  5. Use your spatula to ensure all mixture is pushed from the sides of the TM

  6. Add Milk (10 seconds, speed 3)

  7. Stir in Cornflakes, Chocolate Bits and Chia Seeds (10 seconds, Rev+3.5)

  8. Using a teaspoon, place balls of mixture on to a baking tray and flatten slightly

  9. Bake for 12-14 minutes

  10. Cool on a wire rack and keep in an airtight container for up to a week

Tip

Freeze:  You can double the mixture and freeze some cookies.  If freezing baked cookies, they will keep in the freezer for up to 3 or 4 weeks

I freeze the raw dough - make the mixture in to balls, flatten, then flash freeze.  Transfer to a suitable airtight container and keep in the freezer for 4 to 6 weeks.  It's best to defrost them before baking to help keep their crispy-on-the-outside/chewy-in-the-centre texture (but it can be done if desperate  - just add another 5 mins or so to baking time)

    Yummy! I slightly over cooked them so they're more crisp than chewy but the flavours are great. I substituted cacao nibs for White choc bits. Thanks for the recipe.
