Chewy Chocolate Chip Cookies

  • 170 grams unsalted butter
  • 135 grams brown sugar
  • 60 grams white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 290 grams plain flour
  • 100 grams Packet of Vanilla Pudding Mix
  • 1 teaspoon bicarb soda
  • 300 grams choc chips

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Recipe came from the US (Averie Cooks) so I’ve converted to metric and Thermomix.....

    MC stays on for each step.

    1. Add to bowl butter, sugars, egg and vanilla. Mix for 15 seconds on speed 4. Scrape down sides and mix for 1 minute, speed 4.

    2. Scrape down the sides of the bowl and add the flour, pudding mix and bicarb. Mix 10 seconds, speed 4. Scrape down sides and repeat (10 sec, sp 4)

    3. Scrape down the sides of the bowl and add choc chips. Mix for 10-20 seconds, reverse, speed 3. Using your spatula to jiggle mixture if need be. You may need to move mixture to a bowl and stir with a spoon at this point.

    4. Form 1/4 cup measures of dough into balls and repeat until all mixture has been used. Place dough balls into the fridge for at least 2 hours to chill before baking.

    5. Once chilled, preheat oven to 180 degrees and place cold dough balls onto baking trays at least 5cm apart. Bake for approx 11 minutes or until edges have set. Don’t overbake, the cookies will firm up as they cool.

Tip

Really important to make sure these have time in the fridge before baking. It helps them to hold their shape for longer and end up nice and soft in the centre.

    These are my absolute favourite. My kids think they are the best choc chip cookies ever!! I put a little less sugar but the texture is amazing. Soft and chewy.
