For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat your oven to 180 degrees and place the muffin liners in a 12 hole tin. (Cupcake papers don’t come up high enough to keep the tray clean - and its a bugger to wash melted honeycomb off, don’t even think about making these without liners.)

In a clean dry bowl add flour and sugar. Combine for 5 secs/sp 3.

Leave lid in place and place a small cup or jug on top. Weigh butter into that, then melt in the microwave - or however you usually melt butter.

Remove lid and add honeycomb and white bits to mix and roughly combine for 5 secs/sp 3.

Add the rest of the wet ingredients to the dry and mix for 10secs/sp 3. Scrape down sides and repeat for 10/rCounter-clockwise operation/sp 2.5

Divide batter between the 12 cases and bake for 20 minutes or until cooked when tested.
