Chocolate Covered Peanut Butter and Oat Bites

  • 100 g peanuts, roasted
  • 15 g macadamia oil, or substitute
  • 40 g oats
  • 40 g Butter
  • 40 g Rapadura Sugar, or substitute
  • 60 g dark chocolate, 85% cocoa

Recipe's preparation

    Prep
  1. 1. Add peanuts and oil to TMClosed lid and blend - 5 seconds/speed 7

    2. Add oats, butter and sugar and combine - 10 seconds/speed 4

    3. Place bowl in fridge for 15 minutes to chill mixture. Roll into balls, line on a tray and place in freezer while you prepare chocolate

    4. Place chocolate (broken up) in TMClosed lid and melt - 50 deg/2 min/speed 1. Add another 30 seconds at a time if chunks remain. pour into separate dish

    5. Remove balls from freezer and stick a toothpick in each one. Dip each ball in chocolate (use a spoon to pour chocolate over balls if need be)

    6. Place on baking paper and back into fridge to chill

Tip

If you are substituting rapadura sugar for raw sugar, make sure you mill it first or the balls will be gritty.

I haven't tried honey as a substitute yet but let me know if you do!

Make sure you chill the balls prior to dipping them in chocolate.

Serve straight from fridge or freezer.
