Coconut yogurt cake

Ingredients

Coconut yogurt cake

  • 200 grams caster sugar
  • 125 grams Butter, room temp and chopped
  • 2 eggs
  • 150 grams SR flour
  • 75 grams plain flour
  • 40 grams Desiccated Coconut
  • 200 grams natural yogurt
  • 1 tsp vanilla extract
  • 1 dash coconut essence
  • icing sugar for dusting, optional

Recipe's preparation

    Prep
  1. Preheat the oven to 160C f/f. Grease and line either a loaf pan, springform (23cm), or other suitable pan of choice.

    1. Blitz sugar in the Closed lid 2 or 3 times on Turbo.

    2. Add remaining ingredients except for optional icing sugar.

    3. Blend sp 4.5/20secs. Scrape and repeat 20 seconds.

    4. Spread into your preapred pan and bake for 45 minutes or until cooked when done.

    5. Leave in pan for 5 mins before turning out to cool.

    6. Lightly dust with icing sugar if desired ( optional).

Tip

The addition of yogurt gives this cake a lovely tang, as well as keeping it lovely and moist.

Having said that, it is slightly more dense than most cakes.

You can also ice it if you like..pink is nice.. :P
