The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipe's preparation
- Place 9 crackers in the base of a square tin or container
Place lemon zest and sugar into mixing bowl and mill 20s/speed 9 Scrape down sides with spatula. - Add custard powder, cornflour, eggs and milk start Thicken/80°C
- Pour over crackers and add 9 more on top
Set in fridge
Ice with white icing and sprinkle with coconut
