  • 260 g Cashews
  • 200 g currants
  • 80 g Dates (pitted)
  • 1 teaspoon Cacao, or cocoa - use more or less for your tastes
  • coconut oil, enough to bind all ingredients together

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Process
  1. Closed lidPut cashews into mixing bowl and chop 8 seconds, speed 7. Remove and set aside.

     

  2. Closed lidPut currants and dates into mixing bowl and chop for 20 seconds, speed 8.

  3. Closed lidAdd the nuts to the fruit mixture in the mixing bowl and add cacao (cocoa) and mix for 10 seconds, speed 8.

    Counter-clockwise operation Reverse for 10 seconds on speed 7

     

  4. Take MC off and slowly add the coconut oil while processing on speed 6, check the consistency every few seconds.

    Once it looks like its coming together take the lid off and test roll. Continue to add coconut oil if you this it needs it.

  5. Roll into bite size balls, roll in coconut and store in an airtight container in your refrigerator or freezer.

Tip

Be careful not to not chop the nuts for too long, otherwise they will start to form a paste.

 

Cashews can be replaced with other types of nuts, such as macadamias.

 

Adding some cocoa powder to the mixture in step 3 will create a chocolately variation.
