Easy sugar free banana bread

Ingredients

  • 75 g medjool dates, (About 5 dates)
  • 230 g ripe bananas
  • 250 g Milk
  • 2 eggs
  • 300 g S R Flour
  • pinch salt
  • 1 level teaspoon bicarb soda
  • 1 level teaspoon ground nutmeg

Recipe's preparation

  1. - Place dates (seeds removed!) in TM bowl. 5 speed 9.  Scrape the bowl, it will be by sticky.

  2. - Add banana and mash at speed 8, 5 seconds

  3. - Add eggs and milk, 5 seconds, speed 8

  4. - Add flour, bicarb, salt and nutmeg, mix 10 seconds, speed 4

  5. - Pour batter into greased and lined loaf tin (mine is 10cm X 20cm and 7 cm high)

  6. - Bake at 180 degrees C for 40-50 mins or until cooked. 

  7. - suitable to freeze

    ** I often use spelt flour with  2 tsp baking powder added

    ** You can use cinnamon or mixed spice in place of the nutmeg

    ** Sometimes I use 1 large banana and make it up to 230g with some leftover apple sauce (made from the apple sauce recipe in the everyday cookbook)
