Cake mixture

  • 150 grams Self Raising Flour
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Lemon curd

  • 60 grams lemon juice
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Recipe's preparation

    Cake Mixture
  1. To make cake mixture, place all ingredients into TM bowl and beat for 30 seconds on speed 5.  Remove from bowl and set aside.

  2. Lemon curd
  3. To make lemon curd, place all ingredients into TM bowl and cook at 100 degrees for 5 minutes on speed 4.

  4. Cake
  5. Grease and line a round cake tin.
    Spread half the cake mixture into the base of the tin (the cake mixture will be quite thick, I usually spread it with wet fingertips.)
    Pour lemon curd over cake mixture (the lemon curd mixture will be quite runny.)
    Dollop 1/2 teaspoonfuls of remaining cake mixture over the top of the lemon curd.
    Bake in 180 degree celsius oven for half an hour.
    Eat warm or cold.

Tip

[size= large]mmmmm...glad I got this recipe converted. It is a breeze in the Thermo and still one of my favourite cakes ever. If you want to make it without a Thermomix, the original recipe post is here. Super easy one to double if you want to make two cakes - trust me, they will go fast![/size]

    Very tasty! I doubled the recipe to fit a 20cm round tin. Reduced sugar to 120g for both and that was definitely sweet enough. Will do 100g next time. Also made curd first so any left around the blades went in to the dough.

    If my cake tin was slightly smaller the original amount would have been fine.
    Was nice with ice cream, will definitely make this again, the family loved it!

    I cut sugar in every recipe I use and did so successfully with this recipe.

    I wish I had read the comment that suggested a lower temp for fan forced ovens as mine was VERY caramelised around the edges. I will lower the oven temperature next time and take up others’ suggestions to double the recipe! 😜

    Great recipe. I reduced the sugar to 150g. Amazing with ice cream. Definitely needed to double it though, I didn't have enough mixture to cover the bottom of my cake tin.

    Ive baked this twice so far, once today and once yesterday and its delicious!!! Today, I Reduced the sugar to 95g and my oven temp to 175 degrees (fan forced) as it was a bit drier yesterday and I added lots more citrus curd (I already had my own made and was using it up) YUM YUM the whole family loved it

    My husband is not too keen on lemon dishes, but came back for second helpings of this. Definitely worth doing and a very simple recipe to follow. My only warning is don't expect there to be any left over.....Lol

    So yummy, I doubled both the batter and the lemon curd. When it came time to assemble the cake I was worried about the amount of lemon curd to add to the layer but should have smothered it in it as it wasn't nearly enough. I also added some on top. Colleagues at work loved it.

    Like most people, I doubled the recipie but kept the sugar at 150 g in both the lemon curd and cake mixture. Next time I would probably reduce the amount of sugar to 120 g as it was still very sweet. Delicious served warm straight out of the oven.

    Has anyone made this with the lemon juice you buy? I didn’t have enough lemons ( I doubled the recipe). The curd tasted funny.. I’m wonderOmg if it’s the bought lemon juice?

    ( its cooking as I type. So hopefully the extra cooking might take the taste away)
