Ingredients

Cake mixture

  • 150 grams Self Raising Flour
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Lemon curd

  • 60 grams lemon juice
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Recipe's preparation

    Cake Mixture
  1. To make cake mixture, place all ingredients into TM bowl and beat for 30 seconds on speed 5.  Remove from bowl and set aside.

  2. Lemon curd
  3. To make lemon curd, place all ingredients into TM bowl and cook at 100 degrees for 5 minutes on speed 4.

  4. Cake
  5. Grease and line a round cake tin.
    Spread half the cake mixture into the base of the tin (the cake mixture will be quite thick, I usually spread it with wet fingertips.)
    Pour lemon curd over cake mixture (the lemon curd mixture will be quite runny.)
    Dollop 1/2 teaspoonfuls of remaining cake mixture over the top of the lemon curd.
    Bake in 180 degree celsius oven for half an hour.
    Eat warm or cold.

Tip

mmmmm...glad I got this recipe converted.  It is a breeze in the Thermo and still one of my favourite cakes ever.  If you want to make it without a Thermomix, the original recipe post is here.  Super easy one to double if you want to make two cakes - trust me, they will go fast!

    I have just discovered this recipe and have made it twice in a week..... yum yum yum... double everything as suggested but kept sugar 150g.... cooked 160 deg fan force oven 35 minutes.... it was perfect.... thanks so much..

    Baked it in a 6" tin which made it a little thicker than the recipe pic but still perfect!!

    I double the quantity and pop it into a large slice tin. I place the bottom pastry into the tin and while the curd is cooking I place the top pastry into the freezer to firm up. Then after placing the curd on top of the pastry I grate the pastry (large grate) over the curd. So much easier than pinching snall amounts of pastry over the top. Looks lovely when cooked also.

    Very easy and very tasty. I wish I had taken mine out of the oven a tad sooner but it was still delicious! I did as per comments and double the cake mixture (kept sugar 150g) and lemon curd (also kept sugar 150g).

    This is a fantastic recipe with superb outcome 😊
    I was a little anxious with the topping, but all turned out very well.
    I doubled the recipe and used approx one third to make some individual ones for dessert.
    The double recipe made one square cake, four rectangular ones, and six tiny small muffin size ones (individual ones cooked for 18minutes).

    I doubled the cake mixture but only put 150g sugar in the doubled mixture. I cooked it for 35 minutes in a springform tin at 180 fan forced. Absolutely loved it. Will be a regular in our house, that's for sure.

    This is a fabulous recipe.. big thumbs up from my Lemon loving hubby. I also doubled the cake mixture, i reduced the sugar in both the cake mix and the curd.. no reason other than personal taste. Just cannot fault this recipe :smile:

    i made this for a sick relative yesterday & was so impressed with how easy it was I made one for myself.  I love how it's a little crispy.  Sort of biscuit/cake.  I like that it's thin as its sweet so a small slice is perfect.

    Wow! I've made this three times now with the changes as suggested by other reviewers: double the cake ingredients and halve the sugar throughout. Made in a 22cm round tin. Have also added the pulp of 2-4 passionfruit to the curd for a fantastic passion fruit variation. Thanks for an amazing recipe!

    LOVE this cake recipe, thanks... DEFINITELY works if you double all ingredients EXCEPT sugar, in both the cake and the curd. Just add about 150g. 

    I've made it 3 times and it works perfectly, it will fit in a 22cm spring form tin. Cook it for 30min, check, if it looks a little doughy still, cook another 5-10 min. No more, as it makes a nice moist shortcake, with a nice lemon tang.

    Made exactly as per recipe and turned out very well. We found the tea cake to be a little dry and was better served with cream or icecream or custard. Very easy and quick to make.

    Made this for work. Everyone loved it. I made 1.5 for the cake and curd. it was runny when removed from the oven. However it set while sitting. Cooked for just under 50mins at 160 deg (with fan).

    Edna's lemon curd tea cake : 10 stars from us! Everybody loves it whether served as a cake or a desert.

    Using a 20 cm pan. I made the cake mix 1.5 times; using a 22 cm tin, I doubled the cake mix.This gives a generous amount of cake In both cases.
    ( 1.5x For 20 cm= 225g SR flour, 90g butter, 110g sugar, 2eggs).



    TIP: dipping fingers into maizena ( corn flower) makes spreading the cake mix very easy .

    Do not worry about pouring hot curd mix over the cake mix.

    TIP:By halving all sugars and doubling the lemon juice in the curd mix, the end result is tangy and not too sweet.

    Baking time for the 22 cm cake was 45-50 minutes, 160°C fan forced. The lemon curd was still slightly soft, but we had this for desert, so it did not matter. For a firm curd mix, I baked the 20 cm cake for about 50 minutes.

    I had trouble with this cake, not enough batter so i made another batch. half on bottom and half on top. i baked for 50 mins and still not cooked through. eventually i got it out of oven looked perfect but all mush in center still. Love the idea of this cake and i will attempt again. I'm no baker which is probably the issue. going to try making it into mini loafshaped cupcakes next time.

    This was amazing! I reduced sugar in cake by half and used rice malt syrup in the Lemon curd, divine served with a spoonful of whipped cream. Will definitely make again! Thanks for a great recipe.
