Cake mixture

  • 150 grams Self Raising Flour
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Lemon curd

  • 60 grams lemon juice
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Recipe's preparation

    Cake Mixture
  1. To make cake mixture, place all ingredients into TM bowl and beat for 30 seconds on speed 5.  Remove from bowl and set aside.

  2. Lemon curd
  3. To make lemon curd, place all ingredients into TM bowl and cook at 100 degrees for 5 minutes on speed 4.

  4. Cake
  5. Grease and line a round cake tin.
    Spread half the cake mixture into the base of the tin (the cake mixture will be quite thick, I usually spread it with wet fingertips.)
    Pour lemon curd over cake mixture (the lemon curd mixture will be quite runny.)
    Dollop 1/2 teaspoonfuls of remaining cake mixture over the top of the lemon curd.
    Bake in 180 degree celsius oven for half an hour.
    Eat warm or cold.

Tip

mmmmm...glad I got this recipe converted.  It is a breeze in the Thermo and still one of my favourite cakes ever.  If you want to make it without a Thermomix, the original recipe post is here.  Super easy one to double if you want to make two cakes - trust me, they will go fast!

    I made this for the first time yesterday, I doubled all ingredients other than the sugar and it turned out perfect. I also added some lemon rind to the cake mixture. It's so tangy I love it.

    Very nice! I followed suggestion from other thermie users and doubled the curd and doubled the cake mix. I only used 150g sugar in curd and only 120g sugar in the tea cake. Baked in a springform tin for 35mins in 180c oven and it made a nice higher cake. Will be making it regularly.

    My new favourite recipe. Amazing! I doubled both the curd and the cake recipes but capped the sugar in both to 150g like others suggested. Came out perfect! I also used a cheesecake spring form pan. Will be making this again and again! Thank you.

    Ive put off making this for ages as I thought it was too complicated... Huge mistake, this was so so easy and delicious!! I followed the recipe and measurements exactly and used a 20cm round tin and it was perfect!

    I have made this Lemon Curd Teacake about a billion times (okay maybe not quite that many) and everytime it is a Winner. There have been times when I haven't even gotten a slice. Everyone raves about it and it is so so very simple and quick to make. Today I am going to make 2 in the hope that I actually get a slice. Love, Love Love it!!!!!!!

    Beautiful - I did use another curd recipe that I love and followed other peeps suggestions by double the cake recipe.... A+++ Hubby had 2 slices as soon as it was cool enough to eat.
    I also followed 160 fan forced 30 mins and didn't double the sugar content. xx

    This was super easy and quick to make. Staple ingredients and can make this without going to the shops! I didn't read the comments and wish I did. Beautiful recipe that tastes delicious, however I should have doubled the recipe. For me, it was more like a slice then a cake. Will be making this again and again. Yummy!!

    I double the quantity and pop it into a large slice tin. I place the bottom pastry into the tin and while the curd is cooking I place the top pastry into the freezer to firm up. Then after placing the curd on top of the pastry I grate the pastry (large grate) over the curd. So much easier than pinching snall amounts of pastry over the top. Looks lovely when cooked also.

    Very easy and very tasty. I wish I had taken mine out of the oven a tad sooner but it was still delicious! I did as per comments and double the cake mixture (kept sugar 150g) and lemon curd (also kept sugar 150g).

    I doubled the cake mixture but only put 150g sugar in the doubled mixture. I cooked it for 35 minutes in a springform tin at 180 fan forced. Absolutely loved it. Will be a regular in our house, that's for sure.
