Cake mixture

  • 150 grams Self Raising Flour
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Lemon curd

  • 60 grams lemon juice
  • 60 grams Butter
  • 110 grams sugar

Recipe's preparation

    Cake Mixture
  1. To make cake mixture, place all ingredients into TM bowl and beat for 30 seconds on speed 5.  Remove from bowl and set aside.

  2. Lemon curd
  3. To make lemon curd, place all ingredients into TM bowl and cook at 100 degrees for 5 minutes on speed 4.

  4. Cake
  5. Grease and line a round cake tin.
    Spread half the cake mixture into the base of the tin (the cake mixture will be quite thick, I usually spread it with wet fingertips.)
    Pour lemon curd over cake mixture (the lemon curd mixture will be quite runny.)
    Dollop 1/2 teaspoonfuls of remaining cake mixture over the top of the lemon curd.
    Bake in 180 degree celsius oven for half an hour.
    Eat warm or cold.

Tip

[size= large]mmmmm...glad I got this recipe converted. It is a breeze in the Thermo and still one of my favourite cakes ever. If you want to make it without a Thermomix, the original recipe post is here. Super easy one to double if you want to make two cakes - trust me, they will go fast![/size]

    A great recipe and I took on the tips. My HOT tip. Double the recipe but only increase sugar to 120 to 150g; make the curd first then the base straight after. No cleaning bowl in between - super fast. Super easy. A winner with all my friends and my go to for when guests pop in.

    So this definitely lived up to all the hype! I've heard so much about this cake and finally made it. It was delicious! I made it with berry curd though, as I had some left over. I wasn't sure if I made it right as the batter was so thick, but it worked!

    Delicious 🤤 I was given a bag of Lemons yesterday and this recipe has been on my list to try. I made the 600gm Lemon curd in TM6 and doubled the cake batter in TM5. Will definitely be making this again!

    SuperMum79:Yes I did. I just edited the recipe to suggest doing the cake mix in two lots. It is sooo good. I also made it again the other day subbing stewed Apple. So much easier than making gf pastry for an apple pie and every bit as nice.

    This recipe is so yummy, have made it twice now. Doubled the recipe to make two cakes both times. I use the 600gm Lemon curd recipe from the Cookidoo site and spread it between the two cakes. I then have plenty of left over curd in the fridge for other recipes. I cooked them this time on 170C for 35 mins as I felt 180C was too hot for my oven. I serve this cake warm with a dollop of the extra curd and some double cream. Yum. Smile

    I made this yesterday but in a 30x 20 Lamington tin. Tripled the quantity of cake mixture but did it in two lots to mix (1.5 x 2) and doubled the lemon curd. Also got extra points for making it Gluten Free with Woolworths gf Self Raising flour. It is equal top of my gf cakes/slices.

    This is lovely....a winner all round. A super easy, and impressive dessert when you’re taking a plate.

    I’d recently dehydrated a lot of lemon zest to make lemon powder, and frozen the juice for easy access, so even though I didn’t have any fresh lemons, all the ingredients were readily accessible. Next time I might even sprinkle a lemon powder, and icing sugar mix on top.

    Amazing for 5 simple ingredients 👌🏼

    I really love lemon desserts, this one was particularly yum with the smooth lemon curd. It only made a small flat cake but it was enough for 6 people. I didn't double the recipe but did leave the curd to cool before putting on top of the cake batter.

    This is really lovely and easy to make however I find that the base quantity is not quite enough, I found it difficult to spread. The next time I made it, I doubled the recipe, cutting back on the sugar a bit, however didn't use the lot as the base would have been too thick. I found my base was a little bit thick anyway. I would like to increase the base for the original recipe by about a quarter. I found when I doubled the recipe, it was crumbly, which was great as I could squeeze it together, and spread it more easily however the best part about it being crumbly, was that I could sprinkle the crumbs over the top instead of dollops. I will play around with this recipe to get just a little more base. I think if you double the base, you need to also double the lemon filling.

    Very tasty! I doubled the recipe to fit a 20cm round tin. Reduced sugar to 120g for both and that was definitely sweet enough. Will do 100g next time. Also made curd first so any left around the blades went in to the dough.
