Cake mixture

  • 150 grams Self Raising Flour
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Lemon curd

  • 60 grams lemon juice
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Recipe's preparation

    Cake Mixture
  1. To make cake mixture, place all ingredients into TM bowl and beat for 30 seconds on speed 5.  Remove from bowl and set aside.

  2. Lemon curd
  3. To make lemon curd, place all ingredients into TM bowl and cook at 100 degrees for 5 minutes on speed 4.

  4. Cake
  5. Grease and line a round cake tin.
    Spread half the cake mixture into the base of the tin (the cake mixture will be quite thick, I usually spread it with wet fingertips.)
    Pour lemon curd over cake mixture (the lemon curd mixture will be quite runny.)
    Dollop 1/2 teaspoonfuls of remaining cake mixture over the top of the lemon curd.
    Bake in 180 degree celsius oven for half an hour.
    Eat warm or cold.

[size= large]mmmmm...glad I got this recipe converted. It is a breeze in the Thermo and still one of my favourite cakes ever. If you want to make it without a Thermomix, the original recipe post is here. Super easy one to double if you want to make two cakes - trust me, they will go fast![/size]

    I made a double batch today and did the pastry first for the same amount of time to process ie 30secs sp 5. I didn't clean the bowl for the lemon curd (I don't do this either for a single cake) and has come out perfectly fine!

    Delicious cake. I also made the curd first then the pastry without washing the bowl. I also added lemon rind to the pastry. Because the bowl was warm I only mixed the pastry for 10 sec. Before baking I spread slivered almonds for some crunch. Served with berries and cream, room temperature.

    Has anyone made this with pre made curd. I have some curd to use up in the fridge but it is a thick curd made in TM6 not thin as stated in this recipe , I was gifted limes so made into curd.

    I followed the recipe as is and used a 20cm round tin with lined base and sides.

    We had leftovers which tasted great straight out of the fridge two days later!

    Might try adding some lemon zest next time to the batter.

    So delicious! I double to recipe, but only increase the sugar to 150g. I make the curd first and don't wash the thermy in-between. I also make the curd/base the day before, put it in the fridge separately to cool and put together and bake the next morning 👌

    I use my air fryer to bake the double recipe cake. 160 C and 20minutes. The top turns out beautifully with a slight crunch.

    I made this in a small springform pan. I already had Lemon Curd that I'd made previously, so I added 15g milk to the mixture to allow for the thicker, cold lemon curd going on. Turned out beautifully. Thanks for converting.

    So this definitely lived up to all the hype! I've heard so much about this cake and finally made it. It was delicious! I made it with berry curd though, as I had some left over. I wasn't sure if I made it right as the batter was so thick, but it worked!

    SuperMum79:Yes I did. I just edited the recipe to suggest doing the cake mix in two lots. It is sooo good. I also made it again the other day subbing stewed Apple. So much easier than making gf pastry for an apple pie and every bit as nice.
