Ingredients

Muffin Mixture

  • 520 g plain flour
  • 6 teaspoons baking powder
  • 200 g sugar
  • 260 g Rice Bran Oil
  • 1/2 teaspoon salt
  • 3 teaspoons vanilla
  • 3 eggs
  • 450 g Milk

Feijoas

  • 8 feijoas, Large or 16 small cut and pulp removed

Icing

  • 200 g icing sugar
  • 1/2 milled orange peel
  • juice of an orange

Recipe's preparation

    Preheat oven 200 degrees Celsius (175 degrees C fanbake). Line muffin tins with paper cases.

  1. Peel a whole orange, mill peel in TM speed 9/15 sec or until peel is finely chopped.  Remove 1/2 the peel and set aside. 

  2. With 1/2 the orange peel still in TM, place Feijoas pulp into TM bowl and mill speed 4/2 seconds. Set aside in another bowl.

  3. Place flour, baking powder, sugar, oil, salt, vanilla essence, eggs and milk into TM bowl.  

  4. Mix 23 sec/speed 5-6.  Scrape sides then mix 4 sec/speed 6.

  5. Use a spring loaded 6cm across icecream scoop, scoop out mixture into muffin cases.


    When all the mixture is evenly distributed.  Take the reserved feijoa/orange mixture and evenly distribute over the 20 muffins. Gently poke each spoonful into the muffin mix and stir around a little.

  6. Bake for 24 mins or until a squewer comes out clean.  They should be light brown on top and spongy to touch.


    Take the muffins out of the tins and let them cool on a cooling rack.


     

  7. Orange Icing:


    In a clean dry TM bowl, place icing sugar, reserved orange rind and orange juice.  Blend 6 sec/speed 6.  Scrape sides, 3 sec/speed 6.


    When muffins are cooled, spread orange icing over them, then enjoy.
