Flourless Gluten Free Chocolate & Raspberry Muffins – TM5

  • 280 g almonds
  • 30 g cocoa
  • 2 tsp baking powder
  • 2 eggs
  • 1 tsp Vanilla Paste, Generous teaspoon
  • 50 g olive oil
  • 90 g Milk, Full Cream
  • 60 g Raw Honey
  • 120 g frozen raspberries

Recipe's preparation

  1. Pre-heat oven to 160 deg / 320F

    Place 12 Large patty pans into Muffin Tray

    Add almonds into Mixing Bowl and Mill 10 Sec/Speed 7.  Add cocoa, baking powder, eggs, vanilla paste, olive oil, milk, raw honey and frozen raspberries.

    Blend 40 seconds/Speed 5.  Scrape down sides of bowl with spatula and blend for another 5 seconds/Speed 5.  Mixture is quite thick at this stage.

    Divide evenly between prepared patty pans.  Bake 30 Minutes (160 deg) or until a wooden skewer inserted into the centre of the muffin comes out clean. 

    Note:  These are not overly sweet muffins.

To add some additional sweetness, add chocolate icing.
