GF & DF Donut Cupcakes (variant of DF recipe)

Cupcake Mix

  • 100 gram GF Self Raising Flour
  • 1/4 tsp salt
  • 1/4 tsp Nutmeg
  • 1/8 tsp cinnamon
  • 80-100g grams caster sugar
  • 30 grams extra virgin olive oil
  • 1 egg
  • 120 grams lactose free milk

Topping

  • 1-2 tablespoons sugar
  • cinnamon to taste
  • 1 heaped tablespoon Nuttelex

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cupcakes
  1. Add self gf raising flour, salt, nutmeg, cinnamon and caster sugar to TM Bowl. 

     

    Turbo a couple of times to combine.  Set aside in a separate bowl.

     

    Add oil, egg and lactose free milk to TM Bowl. 

     

    Mix for 5 seconds on Speed 5. 

     

    Add dry ingredients to wet mixture in TM Bowl.

     

    Mix for 5 seconds on Speed 5 to combine.

     

    Pour into cupcake trays (using patty pans) and bake at 175 degrees for 20-25 minutes or until skewer comes out dry.

  2. Topping
  3. Combine sugar and cinnamon in small bowl.

     

    Melt butter in the microwave.

     

    Immediately after removing the cupcakes from the oven, using a pastry brush, brush each cupcake generously with butter then dip into the cinnamon sugar mixture / sprinkle cinnamon sugar mixture on top of each cupcake using a spoon.

Tip

I didn't exactly measure the nutmeg or cinnamon. Using the little spice jars I added 1 'shake' of cinnamon and 2 'shakes' of nutmeg to the dry ingrediants and 1 'shake' of cinnamon to the sugar topping.

    Amazing! I also tried with 40g coconut sugar instead of caster sugar. slightly different taste to a normal donut but my oh my it was yummy, soft, fluffy and moist!

    Yummo. Really taste like a donut.  I doubled mix and usec 130g sugar as thats all i had. Still yummy. 

    Also did some with jam on top.

    These are amazing. I only put in 40gm sugar (coconut) and substituted 1/4 cup apple sauce for the egg. Delicious!

    These were good. I cut down on the sugar to make them a bit healthier and added blueberries and raspberries. Thanks for sharing.
