Gluten Free Banana and Strawberry Bread

Ingredients

2 portion(s)

eggs

  • 2 eggs
  • 2 ripe bananas
  • 250 g strawberries
  • 100 g Rice malt syrup
  • 100 g buckwheat flour
  • 50 g Shredded coconut
  • 1 teaspoon baking powder, heaped
  • 1 teaspoon cinnamon
  • 80 g coconut oil, or butter

Recipe's preparation

  1. Melt coconut oil on 100 deg, 1 min, speed 1. 

    Add banana and strawberries and mix for 3 seconds, speed 8.

    Add all other ingredients and mix for 5 secs, speed 7.

    Bake for 30 mins at 180 degrees.

Tip

If you feel like something extra sweet, add dark chocolate, blitzed at the beginning into chunks and set aside. add in after all other ingredients have been mixed, and stir through.

These can be made into muffins, and cooked for 12-15 mins.

Easily frozen for lunch snacks.
