Goji chia muffins

Ingredients

12 piece(s)

  • 175 g Spelt grain
  • 175 g desicated coconut
  • 25 g chia/flax seeds
  • 10 grams baking soda
  • 50 grams Goji Berries
  • 1 egg
  • 150 grams whey/ milk
  • 60 grams brown rice syrup or honey
  • 1 teaspoon vanilla
  • 60 g coconut oil

Recipe's preparation

  1. Add spelt, coconut, chia/flax seeds and baking powder. Grind 2 minutes/ speed 9.

    Add goji berries. Grind 10 seconds/ speed 9.

    Add egg, whey, brown rice syrup and vanilla. Mix 20 seconds/ speed 6.

    Pour into muffin tins. Cook 20 minutes, 180 degrees celcius.

Tip

Flours may be changed out for other grains or nuts. Nuts will need short grind time.

Shorter grind time on goji berries will leave larger pieces of fruit in the muffins.
