- 200 grams caster sugar, (Use half Demerara for healthier opt)
- 260 grams Self Raising Flour
- 1 pinch salt
- 1/4 tsp cinnamon
- 70 grams oil
- 1 Large egg
- 1 tsp vanilla extract
- 200 grams Milk, (Buttermilk opt)
- 6 tsp Jam, (I use Strawberry)
Sugar Topping
- 1/2 cup sugar
- 1/2 tsp cinnamon
- 40 grams melted butter

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Preheat oven to 180 C and put muffin cups in a 12 cup muffin tray.
Place caster sugar, flour, pinch of salt and cinnamon in TM and Turbo once or twice to combine.
Add the oil, egg, vanilla and milk to TM and and mix 6 seconds speed 5 until just combined.
Place a large spoonful of mixture in each muffin paper. Make sure you have at least 2/3 of the mixture on the bottom of muffin as Jam drops to the bottom sometimes. Very gently fill with 1/2 tsp of jam. Cover the jam with remaining muffin mixture.
Bake 20-25 minutes ensuring oven is preheated and muffins do not sit on bench too long (this will prevent jam from dropping)
Remove from oven and set aside to cool slightly.
Melt butter and in a separate bowl (I do this whilst muffins are baking).
Combine the sugar and cinnamon in a bowl.
Brush the tops of each muffin with melted butter and dip in cinnamon sugar. (Do this twice for double crusted naughtiness). Enjoy!

Tip
Jam may drop for lots of reasons such as if mixture is too thin or has been over mixed, if Oven is not preheated or if mixture is left to sit too long before putting in the oven. If your jam drops, simply pipe in some extra after cooking and enjoy!
Substitute jam with lemon spread, chocolate or nutella for a lovely variation.

Jam Doughnut Muffins - Best muffins ever! I have made these several times now, I use grapeseed oil and 1 teaspoon of homemade strawberry jam (http://www.recipecommunity.com.au/sauces-dips-spreads-recipes/1-punnet-speedy-strawberry-jam/110790). I also mix the butter/sugar/cinnamon topping together in a single bowl and simply brush the tops as I find this quicker than brushing then dipping. The doughnut texture is perfect! I would highly recommend this recipe! Five stars! Thanks for sharing!

Made these today for afternoon tea whilst we watched the footy. They were lovely, not heavy, and very tasty. Only request from my girls and hubby was more jam. My youngest daughter is allergic to dairy so we made them dairy free, using soy milk and nuttelex for the sugar topping.
